There are a number of different Pancit noodles to use. Canton (Cantonese) noodles are about the size of thick spaghetti noodles. You'll truly enjoy this easy to make, one course, one pan meal. If you don't like any of the vegetables used, no problem. Leave it out. You can even add other vegetables such as broccoli, water chestnuts, you name it. It certainly will not take away from the unique flavor created by the other ingredients.
Ingredients:
- 1/2 pound pork, cubed
- 1 chicken breast, cubed
- 3 cups chicken broth
- 1 tbsp cooking oil
- 2 tbsp minced garlic
- 1/2 cup chopped onion
- 1 tbsp salt
- 1/2 pound small shrimps, peeled and deveined
- 1 tbsp pepper
- 2 cups cauliflower (cut into bite-sized flowerets)
- 2 cups snow peas
- 2 cups cabbage, sliced into inch Strips
- 1 cup diced carrots
- 1 cup sliced celery
- 2 tbsp soy sauce

- 1 tbsp sesame oil

- 12 ounces Pancit Canton noodles
, uncooked
- Scallions (optional)
Directions:
In a
large frying pan
, heat oil and saute garlic just until oil is infused with garlic essence. Add onion and cook until transparent. Season with a little salt. Stir in pork, chicken, shrimps and a little pepper. Simmer for 20 minutes or until chicken and pork is white throughout and is no longer pink inside. Add vegetables and gently stir fry for about 3-5 minutes. Add broth and season with soy sauce and sesame oil. Gently add noodles so not to break and cook until noodles are flexible and not crunchy. Season with salt and pepper to taste. Remove to serving dish. Top with scallions if desired.
